DAY 24- COD FILLET WITH GINGER

Cod is one of the cheapest options at the local fishmonger’s, a go-to towards the end of the month when finances run short. I love this recipe with fresh ginger!

Ingredients:

400 gr cod fillet

20 gr ginger, freshly grated

1 lime, juice and zest

50 gr E. V. Olive oil

Mint leaves, a couple, finely chopped

salt and black pepper to taste

In a bowl mix the olive oil, lime juice and zest, ginger, salt and pepper. Use this mix to marinate the cod for about 30 mins before putting it in the oven at 180’ (fan) for about 20 minutes.

Sprinkle with mint and enjoy hot!
