Another recipe from my Polish heritage. I cooked with my father twice in my life, and we both agreed all we wanted for lunch was “placki ziemniaczane”. We would eat them with a sprinkle of sugar (god forbid!) and sour cream (once the reset is over), but they are delicious as they are or with a fried egg on top.
Ingredients:
600 gr Maris Piper potatoes, grated on the large setting
1 small onion, peeled and finely sliced
4 tbsp ground almonds (usually flour)
1 large egg
salt, black pepper and herbs to taste (I like rosemary, finely chopped)
Olive or coconut oil to fry
1-2 eggs per person
Mix all the ingredients well in a large bowl. In a frying pan heat enough oil to cover the bottom of the pan.
Using a table spoon, form balls of potato mix that you’re going to flatten in the pan with the back of the spoon. Cook for about one minute and a half on each side, until golden and crisp, then drain onto a plate lined with kitchen paper. Once all the potato mix has been fried, break the eggs in the same pan and fry to your preferred stage (I like a runny yolk). Serve straight away on top of your fritters.
